The leavening process is a very delicate
phase, which determinate the very peculiar
flavour and consistency of all bakery
products. The proving devices have to
enhance the fermentation of the dough.
The structure of our leaving chambers is
made of polyurethane isothermic panels
covered in aluminium, which creates an
internal compartment with regulated
and constant temperature and humidity,
in order to support the proAobtain
a perfect and homogenized leavening.
The window in the front door permits to
check in any time the development of the
leavening. Timer device on request.
